Maque choux

Cajun-style mirepoix (red, yellow, and green bell peppers, onion, celery, serrano), corn, and hot chicken sausage, smoked paprika, cayenne, salt and black pepper, chicken stock, bit of butter. No complaints!

Congee

A small bowl holding a stew of rice and shredded chicken, garnished with cilantro. The broth has a lovely shimmer and the rice is cooked until nearly falling apart.

Simmered a whole chicken until falling apart, brought the broth up to boiling. 1c jasmine rice, finely grated ginger, crushed garlic, diced green onion, a dash of salt, 1T oyster sauce, 2T soy sauce, white pepper. Simmered 30min. Added some of the shredded chicken, garnished with cilantro.
